Setting the exposure is actually much easier than you think - you basically let the camera do the metering. Instead of using spot-metering and setting it to a bright point in the room, use matrix/evaluative metering, that way the camera is attempting to find the most even exposure for the scene. Matrix/evaluative metering doesn't do a good job of exposing for highlights/shadows, thus the point of bracketing and fusing the exposures.
Bracketing works a little bit differently depending on the camera and the setting the user selects. On Nikon (that's the only camera I have experience with, so someone from a different perspective will have to explain the other defaults) the default is to take the original exposure first, then -3, -2, -1, then +1, +2, +3. If you look at the series of 7 in Lightroom/Aperture, it can get a little confusing if they are in that order. That's why I go into the settings of the camera and tell it to bracket in the following order: -3, -2, -1, 0, +1, +2, +3. There's no difference in the images, just the order they're taken.
So to answer your final question - turn bracketing on, select the number of frames you want to braket for, change/make sure matrix/evaluative metering is selected, use CH/CL (continuous shooting mode) and let 'er rip. Lastly, make check your photos on the camera's display to make sure you covered what you wanted.

Hello,
I think Mike mentined software that will control a Nikon via USB, and allow the camera to do more than 3 photos per bracket. I have a D70 and routinely do 2 brackets, one at 1 stop intervals and one at 2 stops, then delete the duplicate "0" exposure. If there is such a porgram, could you refresh my memory as to the name and where I can find it?

I have been following Michael James for awhile and came across your blog through his website. Iam have never done any realestate photography but am interested in learning how. I have only used Enfuse for creating more landscape type shots, which you can see here.

My question is how do you go about determining the bracketing? I ask because Iam a little confused about the workflow. Do you get a spot reading off the lightest part of the scene where you want information and the darkest area where want information then calculate the number of stops between?
But say for instance you have a 6 stop difference and make a 6 bracket set of the scene. Doesnt the bracketing start at 0 and go 3 stops each side at 1 stop increments? So do you have to set the camera to manual and set the exposure of the mid exposure between your spot readings? This where I get lost?
Can you explain how you go about setting up your camera for a scene?
